Optimal serving temperature : it should be tasted between 9° and 10° C
Eye : Champagne with a yellow soft color, with lemon yellow and bright reflections.
Fluid dress, with fines, deep and delicate bubbles.
Nose: At the beginning it is elegant and mineral and it manifests chalky scents, licorice candy, almond and peach notes.
After, the Champagne develops presenting lightly toasted notes of hazelnut and walnut combined to the pleasant freshness of fennel.
A deeper aeration emanates mushrooms scents at the beginning; later, truffle, honey and nutmeg scents.
Mouth: In mouth it is soft and fresh with a creamy bubbliness. The wine expands rapidly in the palate with a density of pulpy fruits.
Acid notes of green lemon; ginger and spinach mousse scents.
With a fresh ending, it becomes creamy and peppery, thick and delicate, intense and harmonious.
Aperitif with parmesan cheese shavings, Saint Jacques with cream of chestnut, ravioli of foie gras with cream of porcino mushrooms, pork tenderloin with cream of mushrooms, goat cheese.
