Eye : Champagne with a fluid and satin dress and a pale golden yellow color. It presents fine and delicate bubbles , bright and yellow reflections that give depth to the glass .
Nose : At the beginning it presents toasted hazelnuts , brioche , butter and creamy chalk nuances .
A stronger ventilation permits to appreciate the richness of the wine and its notes of curry , chestnut , beet and coffee with milk .
Mouth : In mouth it is soft and fresh ; its bubbliness gives him creaminess and density . Vanilla , rhum and toast notes . Its balance is maintained by a fresh acidity with citron and verbena tones . Thick , generous and delicate ending . The tasting describes “Clos” as a rich gastronomic Champagne , at the height of its noble origin . Refined and powerful : all features of a well-maintained Grand Cru .
Food pairing : cassolette of shrimps and saint Jacques with curry , roasted turbot with curry and rice , foie gras with vin jaune , risotto with Parmesan and truffles , rabbit with mustard and mushrooms , Comté , white chocolate mousse , chips of caramel pralines
