Alcoholic fermentation at 20°. Malo-lactic fermentation in thermoregulated stainless steel tanks.
Ageing: 6 years in cellar
Dosage: 8 g/l
Eye: Champagne with a red aspect.
Nose: the nose attack is similar to a coteau champenois. We can find sour black cherry, cherry and brandy notes.
Mouth: in mouth, it spreads a winy taste, with red fruits, strawberry and raspberry flavours.
Food pairing: It is a structured champagne that ca be suitable with white meat ; pork filet with porcinis, veal and supreme of guinea-fowl.
It is also considered a good partner for desserts with red fruits.
