Eye : Champagne with light reflections of linden green ; fine and plentiful bubbles
Nose : white flowers notes , thorn tree and acacia . We also find more subtle flavors of citrus fruits , pear and linden tree
Mouth : Lively , fresh and powerful attack .
Food paring : Roasted turbot . This Champagne perfectly accompanies soft flesh fishes with sauce of Champagne or figs foie gras
Mono grape Champagne also called blanc de blancs because it is exclusively composed of chardonnay , only grape with white skin . The chardonnay completely expresses itself with white fruits , citrus fruits and flowers aromas .
