Origin: vineyards situated in Arrentières, Colombé le Sec, Colombé la Fosse and Voigny in Côte des Bars.
Assemblage: 40% Chardonnay, 40% Pinot Noir, 20% Pinot Meunier.
Manual harvest, pressing of the whole cluster.
Alcoholic fermentation at 20°. Malo-lactic fermentation in thermoregulated stainless steel tanks.
Ageing :3 years in cellar
Dosage : 8 g/l
Eye: Champagne with a gold aspect, transparent and brilliant with extra-fine bubbles.
Nose: notes of dried fruit, hazelnut, apple and pineapple.
Mouth: this Champagne is elegant and it presents fruity notes, cocoa and dried fruit notes.
Food pairing: It is a Champagne to serve for aperitifs; suitable for lunches and for romantic dinners.
It will agree as will with grilled fish.
