Blend: 50% Pinot Noir 50% Chardonnay.

Dosage: 5 g/l
Ageing: minimum 3 years in cellars.
Appearance: the effervescence constitutes an immaculate foam carpet that is slowly wiped off and is replaced by a fine cordon. It shows a golden robe with light greenish glint.
Nose: it has a flavor of yellow fruits blend to citrus fruits (clementine, orange peels). Then, few notes of maturity like dry apricot and mature wheat complicate the aromatic panel.
Palate: it’s stiff in mouth. Without aggressiveness it gradually reveals a large freshness. Aromas are lightly smoky and roast.

Chardonnay is fruity and fresh while Pinot Noir brings body and strength to the blending.
This Brut de Brut champagne can be served with oysters or with a Carpaccio of salmon, dill and red berries.
